SCALLOPED POTATOES - AMERICAN POTATO GRATIN

PREPARATION

Gratinated Potatoes show you how a great kitchen utensil can make your life easier and add magic to even the most ordinary of ingredients. This potato gratin is the perfect side dish for my false rabbit recipe.

Preparation:

1. Preheat the oven  to 210 °C (convection oven). Insert the baking sheet in the upper third. Generously grease a 24 by 32 cm tin.

2. Peel and thinly slice the potatoes. This is quick and easy with a food processor with a vegetable cutter. Immediately place the sliced potatoes in a bowl of cold water.

3. Heat the cream, milk, garlic cloves, nutmeg and salt in a saucepan; do not boil!

4. Drain the potatoes and place them side by side in individual layers in the baking dish. Spread salt, pepper and some butter or cheese on each layer. Three layers are required. Discard the garlic cloves and pour the warm milk and cream mixture over the potatoes. Scatter small knobs of butter. Bake the potatoes until cooked through, colored and lightly blistered; this takes about 50 minutes.

INGREDIENTS

  • 1.5 kg waxy potatoes

  • 500 ml cream

  • 500 ml whole milk

  • 2 garlic cloves, whole

  • 2 tsp salt

  • 150 g Comté or Gruyère cheese, coarsely grated (optional)

  • 60 grams of butter

  • Grated nutmeg

  • Freshly ground pepper for seasoning

  • Some fresh herbs (if needed)
